Bonus Recipe: Overnight Chilled Chocolate Chip Cookies

Want an easy recipe to test out these hacks? Try my Overnight Chilled Chocolate Chip Cookies—recipe below!

Prep Time: 15 minutes
Chill Time: 12+ hours
Bake Time: 10-12 minutes
Total Time: ~12 hours 30 minutes

Tools Required:

Ingredients:

  • 2 ½ cups (315g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp salt

  • 1 cup (225g) unsalted butter, melted and slightly cooled

  • 1 cup (200g) brown sugar, packed

  • ½ cup (100g) granulated sugar

  • 2 large eggs (room temperature)

  • 2 tsp vanilla extract

  • 1 ½ cups dark chocolate chips or chunks

  • Flaky sea salt (for garnish, optional)

Instructions:

  1. Mix Dry Ingredients – In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.

  2. Melt & Cool Butter – Melt the butter and let it cool slightly. This gives the cookies a chewy texture.

  3. Cream Sugars & Butter – In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.

  4. Add Eggs & Vanilla – Mix in eggs one at a time, then add vanilla extract.

  5. Combine with Dry Ingredients – Slowly fold in the dry mixture until just combined.

  6. Fold in Chocolate – Stir in the chocolate chips or chunks.

  7. Chill the Dough – Cover the bowl and refrigerate overnight (or at least 12 hours).

  8. Preheat & Scoop – When ready to bake, preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet, spacing 2 inches apart.

  9. Bake – Bake for 10-12 minutes until edges are golden but centre look slightly underdone. Let cool on the tray for 5 minutes before transferring to a wire rack.

  10. Sprinkle with Flaky Salt (Optional) – Enhances the flavour and balances sweetness.

Why Chill Overnight?

  • Richer Flavour: The sugar absorbs moisture, deepening the caramel-like notes.

  • Better Texture: Chilled dough bakes thicker and chewier with a crispy edge.

  • Easier Prep: Make ahead and bake fresh whenever you want!

Pro Tip: Freeze pre-scooped dough balls and bake on demand—just add 1-2 extra minutes to the bake time!

Happy baking! 🍪
